- 1 cup sweet mini peppers (sliced, or red pepper strips, red, yellow, or orange)
- 6 oz. sliced mushrooms (sauteed)
- 1/4 cup slivered almonds
- 3 green onions (sliced)
- 4 handfuls baby spinach (I buy prewashed spinach, wash if needed)
- 2 Tbsp. rice vinegar
- 1 1/2 Tbsp. soy sauce
- 2 tsp. splenda (sugar, or Stevia Granulated)
- 1/2 tsp. sesame oil
- 1/4 tsp. ginger puree (also called ground ginger)
- 1/4 tsp. Sriracha sauce (or more if you want it spicy)
- 2 Tbsp. olive oil
