- 2 cups salad (green leaf, — I use arugula here)
- 1/2 red bell pepper (washed and chopped)
- 1/2 yellow bell pepper (washed and chopped)
- 1 cup shredded carrot
- 1/4 cup fresh mint (roughly chopped)
- 1/2 cup unsalted peanuts (roasted, roughly crushed - throw them in a ziplock bag and roll a rolling pin over them once or twice)
- 1 avocado (ripe, sliced lengthwise, pitted and chopped into bites)
- 1 tsp. black sesame seeds (to garnish, optional)
- 1 tsp. sesame seeds (to garnish, optional)
- 2 Tbsp. walnut oil (sub - olive oil)
- 2 Tbsp. peanut butter
- 2 Tbsp. filtered water (cold)
- 1 Tbsp. tamari (sub - soya)
- 1 Tbsp. maple syrup (sub - honey)
- 1 clove garlic (minced)
- 1/2 lime
