- 1/2 cup sliced almonds
- 1 cup edamame (shelled)
- 12 oz. cabbage coleslaw mix
- 2 cups purple cabbage (or just use more cabbage mix)
- 1/2 cup matchstick carrots
- 1 bunch scallions (greens only, chopped)
- 1/4 cup cilantro leaves (chopped)
- 15 oz. mandarin oranges (drained)
- 1/2 cup oil (such as, canola or vegetable)
- 1/2 cup cane sugar (honey or agave is fine too)
- 3 Tbsp. apple cider vinegar (or just use more rice vinegar)
- 3 Tbsp. rice vinegar (or just use more apple cider vinegar)
- 1 Tbsp. soy sauce
- 1 1/2 tsp. sesame oil
- 1/2 tsp. garlic powder
- 1/4 tsp. ground ginger
- 1/2 tsp. red pepper flakes

Made this for a small pot-luck at work- was a big hit & delicious! The dressing is wonderful for ANY salad (I used about half the sugar and it still had a good mix of sweet/savory. )

My family and I loved this simple, delicious salad. Next time, I'm doubling the edamame and adding soy glazed grilled salmon on top for a full meal. YUM!

Very well received as a side salad for Christmas dinner: roast tenderloin.
We used a store-bought sesame dressing due to lack of time. But I’ll try this recipe again with the dressing it calls for.

Best salad I’ve ever tasted! It’s sweet and salty at the same time, the fried noodles give the perfect crunchy taste

Pretty good! My husband even ate this salad and he’s not a salad eater. I just wish the dressing wasn’t so vinegary.
