Absolutely delicious
With a few additions and changes in how to cook. First, I always brine for a few hours my chicken. A couple of hours prior to cooking I drained and dried the chicken cutlets and put them in the soy sauce and lemon marinade.
In the meantime in a separate bowl I added the hoisin sauce, sesame oil, honey, black pepper and ground ginger.
I had cut up my peppers and onions earlier because I knew this dish would come together quickly.
Since I had no wok, I used my cast iron skillet. I started by getting the skillet nice and hot and added the soy/lemon marinade chicken. Cooked it for 3-5 minutes hen removed the chicken. Then I added the peppers and onion and after 3-5 minutes added minced garlic.
The chicken was returned and the house mixture was added. The chicken was cooked for and additional 3 minutes and the skillet was turned off and the stir fry was put into a large bowl.
The chicken stir fry was poured over a bowl of sticky white rice. Absolutely Delicious.
The next time I make it I plan to add water chestnuts and some green onions.

It came out really well. I ended up using some ramen noodles instead of rice and added orange stir fry sauce.
