- 4 chicken breast halves (1 3/4 pounds, boneless, skinless)
- 1/2 cup mayonnaise
- 1/4 cup rice vinegar
- 2 1/2 Tbsp. wasabi powder (I'm not sure I actually used that much - you may want to start with 1 1/2 T. and taste test as you add a little more at a time)
- 1 1/2 tsp. sesame oil (Asian)
- 1 1/2 Tbsp. water
- kosher salt
- freshly ground pepper
- 2 heads Boston lettuce (I had spinach that I needed to use, torn into bite-size pieces)
- 1 asian pear (large, —halved I used a regular ol pear, cored and thinly sliced)
- 1/2 seedless cucumber (halved lengthwise and thinly sliced on the bias)
- 2 scallions (white and green parts thinly sliced)
- 1 cup mung bean sprouts
- 1/2 cup peas (roasted wasabi, coarsely chopped)
