- 1 garlic clove (minced)
- 1/4 cup natural peanut butter
- 1/2 tsp. fresh ginger (or ginger powder)
- 1/2 tsp. garlic powder
- 2 Tbsp. cilantro (+ 1 Tbsp for garnish, optional)
- 1/4 cup peanuts
- 1 1/2 cups cole slaw (I used a bag of lettuce that contained kale, red cabbage, green onions, carrots, and cabbage. Feel free to use your favorite.)
- 1 cucumber (cut in rounds)
