  • 8 ounces boneless chicken thighs (skinless, ground)
  • 1/4 cup water chestnuts (chopped fine)
  • 1/4 cup dried shiitake mushrooms
  • 1 tablespoon soy sauce (I used reduced sodium)
  • 1/4 teaspoon dark soy sauce
  • 1/2 teaspoon oyster sauce
  • 1 1/2 teaspoons sesame oil
  • 1 tablespoon rice wine (or dry sherry)
  • 1/2 teaspoon sugar
  • ground white pepper (freshly, to taste)
  • 2 cloves garlic (finely chopped)
  • 6 lettuce leaves (iceberg, rinsed, careful not to break)
  • 2 tablespoons scallions (diced)
  • 4 tablespoons hoisin sauce
  • 1/2 teaspoon chili sauce (I used Sriracha)
  • 1 tablespoon warm water

    it came out very salty! it had a lot of flavor but needs to be tweaked a bit

    I made a pretty major subsitution and opted to try this as a vegetarian dish by using chickpeas instead of chicken. It worked out great and even my husband enjoyed it! Easy and tasty. Will make again.

    Added a little garlic and ginger and red pepper flakes to the marinade Very good also used bean sprouts and carrot matchsticks and romaine lettuce for additional crunch a total hit.

    Very good! I made a double batch and had it for lunches. Didn't even need to add the hoisin sauce because it was so tasty but I did add it.

    I have made this recipe and used the lettuce wrap and spinach tortillas. Kids like it too. Easy to make and great taste.

    Perfect! I often double the sauces. I like to top my lettuce wraps with grated radishes and grated carrots.
