- 2 1/4 tsp. rapid rise yeast
- 1 cup warm water
- 1 pinch sugar
- 3 1/2 cups all purpose flour (or bread flour)
- 1 tsp. salt
- 1 Tbsp. olive oil (divided)
- 2 Tbsp. olive oil
- 2 cups shredded mozzarella cheese
- 2 pears (large ripe, cut into thin slices)
- 1/2 red onion (cut into thin slices)
- 4 oz. prosciutto (thinly sliced)
- 1/3 cup crumbled blue cheese
- 3 cups arugula

Directions
- To make the pizza dough, in a glass measuring cup or small bowl, combine yeast and 1 cup warm water. Add a pinch of sugar and let sit for 5 minutes.
- In the bowl of a KitchenAid® Stand Mixer, add the flour and salt. Mix the ingredients until combined. Add the yeast mixture to the flour mixture. Next, add 1 tablespoon of olive oil. Using the beater blade, mix until combined. Switch to the dough hook and knead for 5 minutes on medium speed or until dough is silky and smooth.
- Spray a large bowl with cooking spray. Form the dough into a ball and place in the bowl. Cover the pizza dough with a damp towel and set in the KitchenAid® Warming Drawer, set on the bread proof setting. Let the dough rise for 45-60 minutes or until dough has doubled in size.

This was pretty good!! The dough rose as expected and the taste was pretty good. My one issue with the recipe is that the pizza is a bit dry, it could use a sauce or drizzle on top!
