Ingredients

4 SERVINGS
- 1/3 cup extra virgin olive oil (plus more as needed)
- 2 cups arugula (or rocket, firmly packed)
- 1/2 cup blanched slivered almonds
- 2 Tbsp. fresh lemon juice
- 1 tsp. minced fresh garlic (1 clove)
- 1/3 cup grated Parmesan (or 2 teaspoons sweet white, yellow, or chickpea miso paste)
- 1/4 tsp. sea salt (plus more to taste)

Directions
- Throw the ingredients into your KitchenAid® blender in the order listed. Secure the lid, remove the center lid cap, and insert the tamper. Blend on high for 30 to 60 seconds using the tamper to guide the ingredients through the blades until well combined and to your desired consistency. (You may need to stop the machine and scrape down the sides of the container.)
- Serve with cooked pasta or spiralized noodles; as a dip with crackers, bread, or crudités; or slathered on sandwiches and wraps.
