- 6 rolls (rice paper, alternatively, turn this into a more traditional wrap with whole wheat tortillas)
- 2 cups baby spinach
- 1 red pepper (sliced)
- 1/4 artichoke heart (recipe Spicy, Dip, or could substitute 1/2 15-oz can artichoke hearts packed in water, well drained)
- 1/2 lb. firm tofu (drained and pressed)
- 1 1/2 Tbsp. lemon juice (half a lemon)
- 1 1/2 tsp. balsamic vinegar
- 1 Tbsp. tamari sauce
- 1/4 tsp. dried rosemary (or 1.5 tbsp fresh rosemary)
- 2 tsp. olive oil
