Not a great dish for me. Too many ingredients to put in a rice cook and timing is not right for proper cooked rice. I’ll keep with a bean dish ‘separate’ from the rice and layer the plate.

This side is a perfect match for the Cuban Marinated Pork Tenderloin. A match made in heaven......

Pretty easy and straightforward to make. The rice did end up being a bit soft and mushy, but I like it that way. It definitely needs a lot of spice, so don’t be afraid to add a lot of that. As Lisa suggested in her review, I added vinegar, lime juice, cilantro, and scallions, which made it a lot more flavorful. It’s a good, filling meal.

Great. I live in South Florida so I know what good Cuban rice and black beans taste like...It needs a little splash of acid. I used champagne vinegar and a squeeze of lime, Also chopped fresh parsley, cilantro and scallion stirred in before serving making it 100% authentic in taste...it’s easy and quick.

Such a great side with Cuban-style pork shoulder. My boyfriend almost ate all of it! For the seasonings, I used 1/4 tsp cumin, 1/2 tsp oregano (or Italian seasoning works, too), 1/2 tsp chili powder, 1/4 tsp paprika, 1/4 tsp ground chipotle pepper, 1 tsp salt, and pepper to taste. I mixed in the rice and let the seasonings coat it and the sautéed veggies before adding the black beans and chicken stock (which I used instead of water). Then, I added 1 tbsp apple cider vinegar. The cooking/simmering time stated in the original recipe was perfect!

This was good but the dish took longer than expected. I ended up bringing the mixture to a boil and then simmering for 15 minutes

Easy, delicious, and filling!
The dish is also healthy and meatless as well. While it would make an excellent side dish, we ate it as the main dish and it was very satisfying.
