- 1/2 lb. pork sausage
- 2 cans diced tomatoes
- 1 can diced tomatoes (with green chiles, mild, ro-tel, or similar)
- 2 cans red beans (drained and rinsed, or 1/2 bag dry beans, soaked)
- 1/2 bag dry beans (soaked)
- 12 oz. beer (dark, I use Guinness, but YMMV)
- 4 Tbsp. chili powder
- 1 Tbsp. ground cumin
- 1 Tbsp. chile powder (ancho)
- 2 chipotles in adobo (minced)
- 1 yellow onion (large, minced)
- 6 cloves garlic (minced)
- 1 1/2 pinches cayenne (to taste)
- 2 1/2 cups beef broth
- olive oil
