- 4 tsp. rub (Emeril's Chicken)
- 1 egg (lightly scrambled)
- 1 cup milk
- 4 Tbsp. extra virgin olive oil
- 2 cups apricots (frozen, thawed)
- 1/4 cup sugar
- 2 tsp. lemon juice
- 1/2 cup sweet white wine (I used this Easley Winery Sweet Barrel White Wine, but any sweet white wine will work well)
- 1/2 tsp. ground ginger
