Flognarde, or flaugnarde, is a baked French dessert that features fruit covered with a flan-like batter that is then baked. Light and fluffy, this flognarde is made with fresh ripe apricots. This flognarde differs slightly from the traditional preparation in that it has a crust in addition to the filling. The filling is made from a sweet egg and ground almond cream mixture that is poured over the apricots and baked until golden.
Ingredients
- 280 grams flour
- salt
- 2 Tbsp. sugar
- 125 grams butter (cut into pieces)
- 100 grams water
- 1 kg apricots (with pits removed and chopped)
- 5 eggs
- 200 mL whipping cream
- 125 mL milk
- 2 Tbsp. sugar
- 2 Tbsp. almonds (ground)
Directions
- Preheat the oven to 180 degrees Celsius.
- Make the crust by mixing the flour, salt, and sugar together. Cut in the butter and add the water. Divide the dough into two equal pieces. (Only one piece will be used for this recipe. The other may be frozen or refrigerated for later use.)
- Roll out one of the pieces of dough into a round with a rolling pin and place into a pie pan, trimming any extra dough. Prick with a fork and bake 10 minutes. Set aside.
- Place the apricots into the pie pan and bake for 5 to 10 minutes.
- For the filling, mix together the eggs, cream, milk, sugar, and almonds. Pour over the apricots and bake for 40 minutes, until golden brown on top.
