- 2 cups flour
- 1/2 tsp. canela
- 1/4 tsp. salt
- 1/2 tsp. baking powder
- 1 1/4 tsp. baking soda
- 1/2 cup olive oil (fruity extra virgin works best)
- 3/4 cup caster sugar
- 2 tsp. vanilla
- 2 eggs (separated)
- 4 Granny Smith apples (peeled and cut into 0.5 cm dice)
- 1 lemon
- 2 egg whites
- 1 pinch cream of tartar
- 120 grams unsalted butter (softened)
- 100 grams light brown sugar (run your fingers through it to get rid of as many lumps as you can)
- 100 mL maple syrup
- 250 grams cream cheese (***make sure you use full fat cream cheese and not spreadable or low fat. I recommend using Philadelphia brand, have had some bad batches with other brands!***)
- 1 pinch salt
