Description
The pound cake got its name from the amount of each ingredient required for the cake. This recipe for Apple and Mascarpone Pound Cake should really be called a half pound cake, but even with half the ingredients it is absolutely delicious. Full of rich sweet and tart apple flavor, this cake has the perfect density and a light vanilla flavor throughout. Bake time is 45 minutes. Make sure you beat the eggs and sugar together until frothy.

- 250 grams flour
- 1 vanilla beans (or 2 tsp. vanilla extract)

- 2 tsp. baking powder
- 2 apples (large, golden delicious)

Directions
- Preheat the oven to 170C.
- Peel the apples and slice them, not too thinly.
- Beat the eggs with the sugar until light and foamy, approximately 10 minutes.
