- 6 bay leaves (dried, broken into pieces)
- 1 Tbsp. dried rosemary
- 2 Tbsp. dried thyme
- 2 Tbsp. whole peppercorns (I use tri-color*)
- 1 Tbsp. juniper berries
- 1 tsp. garlic (minced dried, not powder)
- 2 tsp. onion (minced dried, not powder)
- 6 star anise (pods)
- 1 tsp. whole allspice (or whole cloves)
- 1/2 cup dried apples (chopped, or pears)
- 4 qt. apple cider (sweet, divided)
- 4 qt. cold water
- 20 lb. turkey (fully defrosted, if frozen, neck and giblets removed)
