  • 50 grams hazelnuts (ground into a flour in a food processor)
  • 30 grams brown rice flour
  • 30 grams oat flour
  • 20 grams sorghum flour
  • 10 grams tapioca starch (or sub the rice, oat, sorghum and tapioca for 90g gluten free flour)
  • 1 tablespoon sugar (brown unrefined, I used light muscovado)
  • 1/2 teaspoon baking soda
  • 40 grams coconut oil
  • 1 flax egg (1 Tbs ground flax + 3 Tbs water mixed and left sat out for 15 minutes)
  • 400 grams squash (chunk of, I used crown prince)
  • 1 tablespoon coconut oil
  • 60 milliliters coconut cream
  • 1 tablespoon maple syrup
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon vanilla extract
  • 1 pinch salt
  • 1 red apple (cored, quartered and sliced into thin slices.)
  • muscovado sugar (Extra, for dusting)
  • vanilla cream (Serve with whipped coconut)
