- 1 1/2 cups old fashioned oats (certified gluten free if necessary)
- 2 tsp. ground cinnamon
- 1 tsp. baking soda
- 1/2 tsp. fine sea salt
- 1/2 cup chopped walnuts (I used pecans, or raisins or chocolate chips, optional)
- 1/2 cup honey (or maple syrup)
- 3 eggs
- 6 Tbsp. unsalted butter (melted)
- 1 cup Granny Smith apple (grated, about 1 ½ apples)
- 1 cup grated carrots (peeled and, about 3 carrots)
