- 1 Tbsp. grated nutmeg (freshly)
- 3 lb. apples (fresh, peels on, cored and chopped)
- 1/2 lb. dried apple rings (chopped)
- 1 gal. apple cider
- 4 oz. applejack (optional)
- 2 vanilla beans (split and scraped, seeds reserved)
- 16 oz. sugar
- 1/2 tsp. kosher salt
- 1 cinnamon stick (optional)
