- 1/4 tsp. salt
- 1 yolk (large)
- 50 mL milk (creme fraiche, double or sour cream to mix)
- 30 grams unsalted butter
- 100 grams sugar (any kind, I like demerera)
- 2 tsp. spice (a mixture of whatever takes your fancy: cinnamon, ginger, nutmeg, cloves, allspice, etc.)
- 3 Tbsp. apricot jam (or marmalade)
- 1 kg apples (dessert, 6 or 7)
- 100 grams sugar
- 2 cornflour (rounded tablespoons)
- lemon juice (optional)
