I made a batch of these roses for my gentleman friend on Valentine's day. The first one was just silly looking, the second somewhat resembled a rose, and the rest turned out pretty well--just takes a few tries to get the hang of assembling them. Honestly, I wasn't expecting too much flavor-wise; fancy desserts like these tend to be more form than substance. However, I was pleasantly surprised that these had a lot of flavor. They tasted like tiny, light, apple pies.
I happened to have some rose petal jam, so I used that instead of apricot jam. It worked well--though, of course, rose petal jam is hard to find.
For presentation, I added a few drops of red food coloring to the jam/syrup. It gave a nice red tint to the pastry flowers and made them look more like roses.
There were just a few burnt spots where an apple slice peeked out of the rose and got too much heat. (Not unlike the thinnest edge of a pie crust.) I wonder if covering them in foil would help with that? Or would it change the consistency too much?
I liked this recipe, and I will make it again. The pastry roses make such a nice presentation, I am thinking of making them for an engagement party next month.
