- 1 pie crust (recipe for a double crust, see mine below or use your favorite)
- 3 1/2 lb. baking apples (I used a combination of Granny Smith, Cortland, Golden Delicious)
- 3 Tbsp. butter
- 1/2 lemon
- 2/3 cup sugar
- 1 tsp. cinnamon
- 1 egg (beaten with a pinch of salt, to brush over crust)
- sugar (for sprinkling on crust)
- 3 cups flour
- 1 tsp. salt
- 1 Tbsp. sugar
- 1 1/4 cups butter (cold, shortening or a combination, I used 1 cup butter and 1/4 cup shortening, cut into pieces)
- 1 egg (slightly beaten)
- 5 Tbsp. ice water
- 1 Tbsp. cider vinegar
