- 4 oz. sharp cheddar (grated, I used Tillamook Sharp Cheddar Cheese Farmstyle Thick Cut and used a food processor to grate the cheese)
- 3 1/2 lb. Granny Smith apples (peeled, cored and thinly sliced)
- 4 oz. grated sharp cheddar cheese (I used Tillamook Sharp Cheddar Cheese Farmstyle Thick Cut and used a food processor to grate the cheese)
- 1/2 cup white sugar
- 1/4 cup brown sugar
- 2 tsp. fresh lemon juice
- 1 tsp. grated lemon rind
- 2 Tbsp. cornstarch (or flour)
- 1 1/2 tsp. ground cinnamon
- 1/4 tsp. ground nutmeg
- 2 Tbsp. unsalted butter (cold, cut into small cubes)
- white sugar (for sprinkling the top crust)
