  • 1 egg
  • 1 tablespoon milk
  • 4 pounds apples (peeled, cored and sliced, Jonagold, Jonathan, Golden Delicious or a mix of 2 – 3 apple varieties)
  • 2/3 cup sugar
  • 1 tablespoon lemon juice
  • 1 tablespoon cinnamon (or to taste)
  • 1 teaspoon ground ginger
  • 1/2 teaspoon salt
  • 2 tablespoons flour
  • 1 tablespoon butter (to dot pie filling)
  • 1 egg
  • 1 tablespoon milk
