- 1/4 cup butter (melted)
- 2 Tbsp. light brown sugar (packed)
- 1/2 tsp. canela (optional)
- 4 pkg. cream cheese (8 oz/227g each; a total of 2lb/907g, softened)
- 1 1/4 cups light brown sugar (8¾oz/248g packed, *reduce to 1 cup if you prefer a less sweet cheesecake)
- 1 tsp. pure vanilla extract (or 2 teaspoons if using imitation vanilla)
- 1 cup sour cream (at room temperature)
- 4 eggs (at room temperature)
- 3 baking apples (firm, like Granny Smith or Fuji, peeled, thinly sliced, *see note)
- 1/2 cup light brown sugar (3½oz/99g packed)
- 3/4 cup chopped pecans (coarsely)
- 1 tsp. ground cinnamon
- 1 cup granulated sugar
- 1/4 cup water
- 1/4 cup salted butter (diced into 1 Tbsp pieces)
- 1/2 cup heavy whipping cream (warmed)
- 1/2 tsp. fine sea salt (or ¾ tsp Maldon, more or less to taste)
