Amazing! Light and fluffy. Not overly sweet. First muffins that turned out perfect on my first try in a long time!

Used 1/2 cup coconut flour instead of almond flour, used one small red and one small green apple (grading them was really hard and took quite awhile; i had to peel them first!) and used regular butter instead of ghee. Next time I make it I'll use more cinnamon and honey. Tastes great otherwise!!
