- 1 1/2 tsp. baking powder (— I recommend aluminum free)
- 1 1/2 tsp. ground cinnamon
- 1/4 tsp. kosher salt
- 1/8 tsp. ground nutmeg
- 2 Tbsp. unsalted butter
- 1 tsp. pure vanilla extract
- 1 egg (large Phil's Fresh, — at room temperature)
- 1/2 cup honey (— or substitute pure maple syrup)
- 1 apple (medium firm sweet, —, such as a Honeycrisp, Gala, or Fuji, peeled, cored, and diced into small pieces, about 1 cup)
- 1/2 cup powdered sugar
- 1/4 tsp. pure vanilla extract
- 2 tsp. milk

Turned out alright. I was hoping for more of a chewy cookie texture they reminded me more of an apple fritter. Still good tho
