    Great. They puffed way up- I got 18 muffins.

    Good muffins with a few substitutions. I used 1 Cup of Oats and 1 Cup or GF flour blend. The honey doesn't provide very much sweetness, which I guess also depends on the type of apples used. Next time I would use maple syrup or sugar instead of the honey.
