- 2 1/2 cups all purpose flour (plus more for rolling out the dough, I accidentally used 2 cups, oops)
- 1/4 cup granulated sugar
- 1/8 tsp. fine salt
- 7 oz. unsalted butter (cold, cut into small pieces, ~3/4 cup)
- 2 large egg yolks (lightly beaten, I forgot to beat before adding to flour)
- 7 Tbsp. ice water
- 3 lb. gala apples (peeled, cored, and cut into large dice, I used 6 apples)
- 1 cup granulated sugar (I used 1/2 cup)
- 2 tsp. lemon juice (freshly squeezed)
- 1 1/2 tsp. grated lemon zest (finely, I used all the zest from 1 lemon)
- 1/2 tsp. ground cinnamon
- 3 Tbsp. unsalted butter (cut into 1/2-inch pieces, I used 2 tbsp)
- water
- 1 Tbsp. sanding sugar (coarse, I used cane sugar)
- 1/4 cup calvados (or other apple brandy, I used 1/4 tsp brandy extract)
