This has become a favorite at my house, and beyond, since I've baked the mini-muffins several times and shared the results with many other people. I've experimented with bread flour instead of white whole wheat and produced some fine mini-muffins. I've discovered that substituting cake flour and all purpose flour in place of the flours in this recipe (and keeping everything else exactly the same) produces really tender muffins, so tender, in fact, that they require a bit of care in removal from the mini-muffin baking pan to avoid tearing -- a small price to pay for such good results. For the topping, I've found that I like to reduce the cinnamon slightly and add a little bit of such dark spices as cardamom, clove, and the like, to complement the flavor of apple cider. i had to add more spices the second time i made these n i used all white flour dueto allergies, and added unflavored coconut oil with the butter for tge dipped topping!! they were a success and will be this time. I used a standard muffin tin same cook time and baking temperature.

I would like to make these, but don't have a mini-muffin tin. If I were to bake this batter in a regular-size muffin tin, what adjustment(s) should be made? Thank you!

Delicious! I wish I used extra apple cider but wasn't sure they would come out right. I will make them again and try adding more cider. This batch was for work so I didn't want to mess them up.
