- 1/4 cup granulated sugar
- 2 Tbsp. all-purpose flour
- 4 large eggs (separated, plus 2 egg whites, at room temperature)
- 1 Tbsp. unsalted butter (cut into little pieces)
- 1/4 tsp. vanilla extract
- 1 pinch salt
- 1/4 tsp. cream of tartar
- confectioners sugar
- strawberries (Large, or raspberries, optional)
- sauce (Whitehall Club, recipe follows, or crème anglaise, whipped cream, or softened vanilla ice cream, optional)
- 3 large egg yolks
- 3 Tbsp. sugar
- 2 Tbsp. sherry (or the same liquor used in the soufflé)
- 1 pinch salt
- 1/8 tsp. vanilla extract
- 1/2 cup heavy cream (cold, whipped until soft peaks form)
- 2 Tbsp. Grand Marnier (or the same liquor used in the soufflé)
