- 1/2 cup cornmeal (yellow or white)
- 1 egg (beaten)
- 1/4 cup blackstrap molasses
- 1 cup buttermilk (or whole milk)
- 1 Tbsp. lemon zest
- 3 Tbsp. unsalted butter (for pan and topping)
- 1 Tbsp. ground sumac (optional)
- 1 Tbsp. demerara sugar
- maple syrup (warm)
- bourbon (splash of, or brandy, optional)
- vanilla ice cream (great, or possibly ginger ice cream)
- nutmeg (fresh grating of, optional finish)
- 3 oz. toasted pecans (or walnuts, optional garnish)
