Will make this again. Used only about 1 lb of andouille. Used only 1/4 tea salt. Added 1 tea cayenne, 1 tea white pepper, dash onion powder & dash gumbo file. The roux took a lot longer to darken to red than expected. Didn’t want to chance burning it.
