  • 16 ounces onion
  • celery
  • bell pepper
  • 4 garlic cloves (minced)
  • 1 tablespoon creole seasoning
  • 1 teaspoon dried thyme
  • 29 ounces fire-roasted diced tomatoes
  • 2 cups chicken broth
  • 7 ounces rice (boil-in-bag)

    Didn’t use a crockpot because I hate them. Used a Dutch oven. Didn’t use a vegetable mix either. Cut up fresh veggies. Cooked sausage in the pan, removed and kept the juices, added diced chicken, onion, garlic, celery, bell peppers, thyme and creole seasoning in and sautéed for a few minutes. Added the two cans of tomatoes, the shrimp and the chicken stock, and sausage and brought to a boil, lowered heat and cooked on low heat with lid on for 30 minutes. Tasted the sauce and added probably another teaspoon of creole seasoning because the tomatoes kind of washed out the flavor. This is delicious!!

    This was too spicy for me. Consider using less creole seasoning. We ended up throwing it out and ordering take out.

    Great! However I did not use a slow cooker.I used a cast iron Dutch oven.

    I modified it by halving the veggies and keeping the two cans of tomatoes. I think it ended up with too much tomato and being a bit bland. I'd recommend using lots of spice and wild rice instead of white like I did.

    Really flavoursome! I used this recipe without the broth (2 cups) and also used cumberland sausages and affes more of the cajun spice!

    This is the best jambalaya, complex but simple to make lov it...will make again soon.
