- 4 whole veal shanks (about 1 pound per shank, trimmed, let the butcher know you are preparing ossobuco)

- all purpose flour (for dredging)
- 1/2 cup vegetable oil
- 1 onion (small, diced)

- 1 1/2 cups dry white wine

- 6 Tbsp. flat leaf Italian parsley (fresh, chopped)
- 1 Tbsp. lemon zest
