- 4 carrots (peeled and chopped)
- 1 yellow onion (large, chopped)
- 3 Tbsp. olive oil (divided)
- 1 tsp. kosher salt (or to taste)
- 1/2 tsp. coarsely ground black pepper (or to taste)
- 2 garlic cloves (minced, about 2 teaspoons)
- 1/3 cup amaretto
- 1 sprig thyme (or 1/2 teaspoon dried)
- 3 cups chicken stock (low-sodium preferred)
- 1 cup water (plus extra as needed)
- 3 slices white bread (firm, cut into 1/2-inch cubes)
- 1/2 cup coconut milk (canned, regular or light, plus a few additional tablespoons for garnish)
- 1/4 cup toasted sliced almonds (or pepitas, hulled pumpkin seeds, for garnish, optional)

Awesome. Loved it and very easy to make. Perfect amount of spices and amaretto. I only had two carrots but it seemed to work out still
