- 1 tomatoes (large, sliced)

- 5 cheese slices (I used pepper jack cheese)
- 4 Tbsp. ketchup (tomato chili, or use regular ketchup and mix 1-2 teaspoons sriracha with it)
- 4 Tbsp. chutney (cilantro mint)
- chat masala (to sprinkle)
- 2 medium potatoes (around 420 grams)
- 1 red onion (small, finely chopped, around ½ cup chopped onion)
- 1 medium carrot (around ¼ cup chopped carrot)
- 1/2 cup green peas
- 1 tsp. chopped garlic (finely,, from 3-4 garlic pods)
- 1/2 tsp. ginger (finely chopped)
- 1 green chile (finely chopped)
- 1 cup bread crumbs
- 3/4 tsp. salt
- 1/3 cup poha (soaked in 1-2 tablespoons of water)
- 1 Tbsp. cornstarch
- 3 Tbsp. vegetable oil (plus 2 teaspoons)
- 1/2 tsp. chat masala
- 1/2 tsp. dried oregano
- 1/4 tsp. red chili powder
- 1/4 tsp. black salt (kala namak)
- 1/4 tsp. dried mango powder (amchur)
- 1/4 tsp. garam masala (powder, optional)
