  • 2 tablespoons ghee (or vegetable oil)
  • 1 onion (medium, sliced)
  • 3 garlic cloves (sliced widthwise)
  • 2 inches ginger (/5cm, grated or pounded)
  • 1 cinnamon stick (small)
  • 2 cardamom pods
  • 1 tablespoon cumin seeds
  • 1 tablespoon coriander seeds
  • 2 green chillies (or to taste)
  • 1/2 teaspoon turmeric powder
  • 1 tablespoon Garam Masala (I make this fresh each time but a shop bought will do)
  • 2 bay leaves
