- 2 russet potatoes (large, cubed)
- 4 Tbsp. canola oil
- 1/2 tsp. black mustard seeds (or regular if cannot find black)
- 1/2 tsp. cumin seeds
- 1/2 tsp. coriander seeds (crushed in a mortar and pestle)
- 1 onion (medium, diced)
- 1 jalapeno (or any hot green pepper, sliced, can use seeded or ½ seeded to tone down heat)
- 1 medium tomato (diced)
- 4 garlic cloves (minced)
- 1 piece fresh ginger (thin 1 inch, grated on small hole grater or ginger grater)
- 1/2 tsp. chili powder (red pepper)
- 1/4 tsp. turmeric powder
- 1/2 tsp. salt (or according to taste)
- 8 Tbsp. water
- cilantro leaves
- 1 wedge lime (or lemon)
- 1/2 tsp. leaves (crushed dry asafetida)
- 1/4 tsp. hing (powder)
- 1/4 tsp. amchoor (powder, mango powder)
- Garam Masala (Touch of, for taste and garnish before serving, optional)
