- 3 Tbsp. grapeseed oil
- 3 cinnamon sticks (I used cassia this time)
- 8 whole cloves
- 1 1/2 tsp. mustard seeds (dark)
- 1 tsp. cumin seeds
- 25 curry leaves (fresh or frozen)
- 3 onions (medium, sliced)
- 1/4 cup minced garlic
- 1/4 cup minced ginger
- 1/2 tsp. turmeric
- 1 tsp. paprika (or cayenne)
- 2 tsp. ground cumin
- 1 Tbsp. ground coriander
- 1 tsp. garam masala (more will be used later in recipe)
- 3 tomatoes (medium, chopped, with juices)
- 1 Tbsp. tomato paste
- salt (to taste)
- 3 zucchini (small, chopped)
- 1,000 grams baby potatoes (chopped into bite sized pieces, I always leave skin on, use boiling potatoes)
- 2 lb. boneless skinless chicken (chopped into bite sized pieces, I used a combination of white and dark meat)
- 1 frozen spinach (10-0z box of, not squeezed dry)
- 4 cups chickpeas (with cooking liquid, or 2 15-oz cans of chickpeas with 2 cups of chicken stock)
- 1 cup chopped cilantro
- 1 Tbsp. garam masala (to taste)
- 1 cup sour cream (or Greek yogurt, preferably whole fat, I only had low fat, which is why mine curdled slightly, which will not affect the flavor but is not as pretty)
- 1 lemon (juice of, or lime, to taste)
- chutney (strong sweet and sour, to serve)
