Description
Based on French patissier Cyril Lignac's recipe, these little, light and fluffy cakes are the perfect bite to end a diner!
Ingredients

- 70 grams unsalted butter
- 4 egg whites
- 50 grams almond flour
- 50 grams flour
- 110 grams icing sugar
- 1 pinch baking soda

Directions
- Add the butter to a pan. Gently swirl the pan as the butter begins to melt. Cook until the white milk solids have browned, about 3-4 minutes and the butter has taken on a deep golden colour and has a nutty fragrance. Be careful not to burn it! Put aside and let it cool down.
- Sift all dry ingredients together.
- Beat the egg whites with a fork and add to dry mixture.
- Pour in cooled butter, cover and leave to rest in fridge for 1 hour.
- Preheat oven to 180 degrees Celsius . Pour the batter in financier moulds or small cupcake moulds. Bake for 12-20mn depending on size of moulds of until nice and golden.

Love the financiers. Perfect to use up the egg whites after making crème brûlé this weekend... (Easier than macaron, which requires whipped egg whites and 3x sifting...) All the ingredients are easy to find and it can be tweaked to make them gluten free for my celiac friends.
