- 1/2 cup red wine (grape juice or apple juice can be substituted)
- 2 cups frozen cherries (or fresh, quartered)
- 3 Tbsp. red wine vinegar (or balsamic vinegar)
- 1 pinch salt
- 1/2 tsp. black pepper
- 1 tsp. dried thyme (or about 1 1/2 tbsp fresh thyme leaves roughly chopped)

Delicious. Quartering the cherries was a bit annoying, though it was easier since I had frozen ones. I really enjoyed the end product, and highly recommend serving with rice.
