- 1 tsp. salt
- 1/2 cup brown sugar (packed)
- 2/3 cup granulated sugar
- 5 eggs (separated and at room temperature)
- 1/2 cup canola (or other light oil)
- 1/2 cup buttermilk (at room temperature)
- 1 Tbsp. almond extract
- 1/2 tsp. cream of tartar
- 5 peaches (medium, blanched, peeled and cut into 1/2 inch chunks)
- 1/3 cup brown sugar (more for less ripe peaches)
- 1 lemon (juice of)
- 1/2 tsp. vanilla extract
- 8 oz. cream cheese (at room temperature)
- 8 oz. mascarpone (cold)
- 1/2 cup heavy cream (cold)
- 1/2 cup confectioners' sugar
- 6 egg whites
- 1/4 tsp. cream of tartar
- 1 1/4 cups granulated sugar
- 2 cups unsalted butter (at room temperature and cut into cubes)
- 1 pinch sea salt
- 1.2 oz. freeze-dried raspberries (processed to a powdered and sifted to remove majority of seeds)
