Hi!
I just tried out this recipe and loved it!
I was a little skeptical it was going to turn out fine because I didn't have neither whey protein nor baking soda. I used instead of the protein a veggie meal replacement shake powder and just skipped the baking soda.
I liked it a lot because these taste like legit waffles, but you are obviously using healthier ingredients. I also decided to make a "syrup" by mixing mashed strawberries, 1 tbsp of butter and 1 1/2 tbsp of erythritol.
I did pour on the waffle maker a little more than 1/4 cup because I didn't know it was going to rise and fluff as being cooked and what happened is that the waffle batter began to spill a little on the sides, so the next ones I poured less and it was perfect!
I made only 4 and I think the ingredient proportion must be right because the flavor and the texture is just like legit waffles.
I do think these are better to eat immediately as you remove them from the waffle maker because the whisked egg whites will make em super fluffy, so you may want to take advantage of that combined with the warmth.
Will definitely make these again in the future.
