Description
This is a slight variation on most toffee recipes, which usually only hints at coffee, taking on notes of it from the caramelization. This recipe calls for the addition of espresso, either in as an instant powder, or, if you don't mind a bit of gritty texture, finely ground espresso beans.

- 8 oz. butter (cut into 1 inch pieces)
- 2 Tbsp. corn syrup
- 3 oz. cold water
- 10 oz. granulated sugar
- 1 1/2 tsp. baking soda (sifted to remove all lumps)
- 1 Tbsp. finely ground espresso (or powdered instant espresso)
- 1 tsp. salt
- 8 oz. dark chocolate (tempered)
- 6 oz. toasted almonds (finely chopped, about 1 cup)
