Best almond butter cookie recipe I have found. I made this gluten-free by using Pamela’s Artisan flour blend. I also reduced the sugar by using only the brown sugar and adding a small amount of Stevia (1 TBSP Truvia). Toss in a 1/2c of chocolate chips and voila - tasty treat.

So good!! I made these for my sister who loves peanut butter cookies, but has sadly developed an allergy to peanuts. I think these are even better than peanut butter cookies! This recipe halves well, and after adding chocolate chips to my last few cookies, I got confused: not sure if it's better with or without them!
