  • 4 brioche buns (sesame seed, split and toasted)
  • 4 tablespoons mayo
  • 6 ounces smoked cheddar cheese
  • 1 cup onions (caramelized, recipe follows)
  • 1 cup mushrooms (sautéed)
  • 4 slices smoked bacon (thick cut hickory, cooked)
  • 4 tablespoons barbecue sauce (bourbon black pepper, I like this recipe by Steven Raichlen, but I like to up the black pepper to at least a tablespoon and use a medium coarse grind.)
  • 3 cups onions (sliced, medium thin)
  • 2 tablespoons butter
  • 1 tablespoon sugar
