  • 1 onion (large, chopped)
  • 1 large garlic clove (minced)
  • 3 quarts chicken stock (or beef stock OR water OR a mixture of both, we usually use half stock half water as the meatballs will create their own stock*)
  • 1/2 cup tomato sauce
  • 1/2 pound string beans (strings and ends removed, cut into 1 inch pieces)
  • 2 carrots (large, peeled and sliced)
  • 1/3 cup white rice
  • 1 pound ground beef
  • 1/4 cup fresh mint leaves (chopped)
  • 1/4 cup chopped parsley
  • 1 egg
  • 1 1/2 teaspoons salt
  • 1/4 teaspoon black pepper
  • 1 dash cayenne (optional)
  • 1 1/2 cups fresh peas (or frozen)
  • 1 teaspoon dried oregano (crumbled, or 1 Tbsp fresh chopped oregano)

    This soup is delicious! it is similar to soup that my husband's aunt used to make. The meatballs are so flavorful.

    This came out great and was easy to make. In the interest of time I used packaged Italian meatballs but otherwise followed the recipe. I added a dash more salt and could potentially have kicked it up another notch with cayenne. I also added a mild poblano chili. But very tasty regardless.

    Tastes very good. I added extra garlic, mint, sofrito and onion.

    This is a simple recipe and easy to change up if you want to. I like mine extra minty so I add more mint and since I enjoy spice I also cut up some jalapeños and add into the mix. The extra spice is just perfect. I don’t use string beans in mine, instead I add potatoes for some extra texture. To each his own.

    Great recipe! Prep and cook time took a lot less than I anticipated. Flavors combined well together. This is a great dish for winter and very hearty. Two thumbs up!!

    Delish! My hubby doesn5 like a bunch of veggies or mint. Used extra cilantro!! 7sed Louisiana's Hot Sauce for heat! Very Easy!

    Delicious! I used cilantro and a bit of oregano in the meatballs instead of the mint. Great recipe to add any veggies you have on hand. Definitely recommend!

    Very tasty! Skipped the mint- added potatoes and zucchini. Tasted just like Mom used to make back in days
