- 250 grams salmon (fresh Alaska, cut in 60g rectangle pieces)
- 120 grams Alaskan king crab leg (and claw meat, cooked and extracted from shell)
- 120 grams brie cheese (including rind, finely chopped)
- 2 Tbsp. fresh tarragon (each finely chopped, chive, Italian parsley)
- 4 Tbsp. shallots (very small dice, divided)
- 500 grams yams (diced)
- 1 garlic clove (minced, plus 6 large cloves, roughly chopped)
- 5 sprigs fresh thyme
- 30 mL extra-virgin olive oil
- 380 mL riesling
- 220 grams butter (whole, reserving 2 tbsps, small dice)
- 120 grams mushrooms (assorted, cleaned, halved or sliced)
